Healthy rhubarb crumble with oatmeal

Oh you beautiful rhubarb time! And Juhuuu, this healthy rhubarb crumble is my first rhubarb recipe this year. Actually, I wanted to post many more recipes with the delicious vegetables, but I unfortunately overslept a bit and seemingly always walked past the rhubarb with my eyes closed :) The rhubarb season ends, as well as for the asparagus, on 24 June. So I still have some time left for other delicious rhubarb recipes.
Fast Rhubarb Crumble
At the weekend, there was this delicious, healthy rhubarb crumble that you can enjoy without a guilty conscience. Instead of wheat flour, I used spelled whole wheat flour and sweetened the crumble with maple syrup and birch sugar. The oatmeal crumbles are really nice crispy. Sooo delicious!
Big Crumble Love
The sweet and sour R tastes especially good Habarber Crumble with a scoop of vanilla ice cream, which I have refrained from this time though. The after-baby-figure can greet;)
But even without vanilla ice cream are Crumbles, so hot fruit with sprinkles, one of my favorite desserts! Crumbles are prepared unimaginably fast and can be varied with different fruits and ingredients. Because instead of rhubarb you can also use any other fruit for the crumble - mixed berries, apricots or apples.
You can also combine the rhubarb crumble with raspberries or strawberries. Really delicious!

In addition to the crumble, I love quick-made rhubarb syrup.Of course, my favorite healthy rhubarb crumble should not be missed here. You only need a few ingredients and 10 minutes for the delicious summer crumble.
- 500 g rhubarb approx. 6 bars
- 100 g Oatmeal
- 100 g Spelled Wholegrain Flour
- 2 EL coconut oil > room temperature
- 2 TL birch sugar
- 1 TL Cinnamon
- 4 EL maple syrup
- Preheat the oven to 180 degrees.
